Tonight's Dinner


This is what I made for dinner tonight. Doesn't is look yummy?!






We had Black Bean Burgers with a slice of avocado and zucchini fries.

Oh my, it was so good. Even my husband was impressed. This one is definitely a keeper.


Zucchini Fries

Cut zucchini in to strips.
Dip into a egg and milk mixture. (egg beaters work well)
Dip lightly into bread crumbs.
Place on baking sheet, then sprinkle with Parmesan cheese and salt.
Bake until they are almost done. Broil a few minutes for an extra crunch!

  1. I know we (bandsters) eat veggies by measuring them.. but I would also love a calorie count/serving size if available. Thanks!!

  2. Good question... Serving size all depends on the zucchini size. I used a large zucchini and got about 3-4 bandster portions. My calorie calculation for 3 servings is about 47 calories, using 1 large zucchini, 1/4 cup egg substitute, 1/3 cup bread crumbs, 2 tablespoons Parmesan cheese. I hope that helps!
